Craft of the Month: Horseshoe Cake!

Mm, just looking at this picture makes me drool. Yep, that’s right, for the second time in a row, this month’s craft was inspired by summer’s delicious fresh fruits … But really, can you blame us? I mean, just take another look at the picture to the left! YUM!

These instructions are a little bit longer than normal, though, so now let’s get to it:

 Ingredients:
  • 3 eggs
  • 1 cup sugar
  • 1/2 stick of butter
  • 1 and 1/4 cup of flour
  • 1 and 1/2 teaspoon of baking powder
  • 1 teaspoon vanilla extract
  • Powdered sugar
  • Strawberries
  • Kiwis
  • Whipped cream

Tools:

  • Bowl
  • Knife
  • Ring Mold Cake Pan
  • Spatula
  • Hand-held electric mixer
  • Saucepan

Here’s How:

  • Preheat oven to 350 degrees
  • Combine eggs, vanilla, and sugar in a bowl and whip on high speed until blended; put aside
  • Melt the butter in a saucepan and add 1/2 cup of water, allow to boil
  • Add the butter to the egg, vanilla, sugar mix and continue to whip until fluffy; put aside
  • Mix all dry ingredients together
  • Sift the dry ingredients into the wet batter
  • Pour the batter into a greased cooking pan
  • Bake for approx. 40 minutes
  • Once the cake is done, take it out of the oven and leave to cool for at least one hour
  • Cut about a one-fourth section of the cake away (so the cake is now a horseshoe shape – don’t worry, you can still eat this part of the cake too!)
  • Cover the cake in whipped cream, and sprinkle powdered sugar over it (optional)
  • Slice strawberries and kiwis
  • Decorate the cake with the strawberries and kiwis as you wish!
  • Refridgerate for one hour and then EAT!
